Mama's Famous Hawaiian Enchiladas

I FINALLY got these into a recipe format...if you know Mom she does everything by taste and what looks right! Hope you all enjoy this YUMMY family recipe!!! This is one of David's FAVORITES and I am sure it will be a hit at your house as well. We like the chicken as well as the beef ones...but the chicken are MY fave! These are EXCELLENT to freeze too, just double the recipe and have one pan for dinner tonight and have another pan in the freezer ready for unexpected company or a lazy night!!! This is a Family recipe and a favorite FOR SURE!!! ENJOY!

Mama's Famous Hawaiian Enchiladas

Ingredients:
2 Large boneless chicken breasts (or 2lbs ground beef...Mama always does a tray of each!)
1 Large Green Bell pepper
1 Large onion
1 large can of olives
1 (10 1/2 oz) can cream of chicken soup
1 (20 oz) cans of crushed pineapples
3 (1.62oz) Enchilada sauce packets (found by gravy packets @ the store)
3 (6oz) cans tomato paste
2 cups shredded cheddar cheese
1 package of burrito size flower tortillas
Salt & Pepper

Prep: Boil chicken until cooked through. While chicken is boiling, Strain crushed pineapple (let strain until added to chicken mixture -reserve juice) chop bell pepper, onion, and olives. Saute' onions and Bell pepper in butter or oil until translucent. Set aside. After Chicken has cooled, chop into bite size pieces and then add to the Bell/onion mixture. Add salt & pepper to taste and the can of cream of chicken to the chicken mixture and mix well. Add three quarters of your pineapple as well as your olives (just eye ball it) to your chicken mixture and reserve the rest for topping your enchiladas, mix well.

Sauce: In a pan add all 3 enchilada packets, only HALF the water that is called for on the back of your packet. (At this time I measured out the pineapple juice that we reserved and used it for part of the "water" called for in this sauce. This may vary depending on brand, mine called for 3c. water per packet originally and I only added 1 1/2c. per packet...part of that was the pineapple juice.) Then add the 3 cans of tomato paste and whisk together until well blended.

Assembly: Ladle a small amount of enchilada sauce in the bottom of your 9x13 dish. Take a flower tortilla and spoon a very small amount of enchilada sauce down the middle, then spoon the chicken mixture down the middle, and finish off with a sprinkle of cheese. Roll up the enchilada and place seam side down in your dish. Keep doing this until your dish is full and then top your dish with enchilada sauce just until tortillas are covered. Then top the tortillas with the remaining olives, pineapple, and some cheese.

Bake at 375 degrees until bubbly and all the cheese is melted...about 30ish minutes.

BABY BUMP

Well, I am officially 29 weeks and in my 3rd trimester!!!! YAY...I am so excited! I am getting bigger for sure and feeling a little uncomfortable, but I just keep thinking about what I get out of all of this and I can't WAIT! Here is a recent pic of me taking pictures at my SIL's wedding last weekend.

THAT'S A WRAP!!!

I have been looking into the Moby wraps for when our sweet little one comes. (in 3 1/2 months!!!) A Friend was sharing with me that she just bought fabric and made her own!? WHY hadn't I thought of that? So I started searching the web about how to make your own Moby type wrap! The original Moby runs about $40 bucks. I came across this thread today and I can just buy fabric and make my own for cheaper! Sounds like Walmart has the best deal on 100% cotton interlocking fabric & best of all it's a NO SEW project!!! Thought you might be interested in one too! ♥

MY ALL TIME FAVORITE TUTORIALS!!!!!

Hey girls:

WHOLE CHICKEN!?!?!?

I didn't know how to cook when I first got married and anything like cooking a whole chicken was very intimidating for me. I found a WONDERFUL Menonite cook book that taught me a LOT about cooking. I finally gave a whole chicken a try and LOVED it! (I have to give kuddos to Reynolds baking bags though!) I kept expierementing and came up with this yummy recipe that my family loves! Hope your family loves it too! =0>

Janell's Whole Chicken Recipe

1 whole chicken
Olive oil
Seasoned Salt
1 family size can of Cream of chicken soup (low sodium)
1/2c. milk
Pearl Onions (peeled)
Baby carrots
1 Reynolds cooking bag

Open the package of one raw whole chicken and pull out neck & gizzards from inside. Rinse well and pat dry with paper towel. Then drizzle with a little olive oil and rub all over outside of chicken. Sprinkle the whole chicken with season salt (to your liking). Then set chicken aside. In a bowl mix cream of chicken soup & 1/2c milk. In the Reynolds bag pour the whole can of cream of chicken soup/milk mixture in the bottom. Gently slide the whole chicken inside and then surround the chicken with baby carrots and peeled pearl onions. Bake according to the directions inside the Reynolds bag box. (It will tell you to add flower, but since we put the cream of chicken soup in there you don't need to do that.) When the chicken is finished, pull out and put on plate. Use the soup mixture as gravy along with the veggies and ta-da...a yummy chicken dinner! Don't forget the Baked potato's!!! ;0> Btw...we always have chicken left over, so I take all the meet off the bones and use later that week in enchiladas, chicken noodle soup or tortilla soup!

SHEPHEREDS PIE ANYONE???

I found this recipe on a blog that I follow http://thehungryhousewife.blogspot.com/ and knew I HAD to try it. I opted to use beef broth instead of the recommended Guiness Beer, but it still tasted WONDERFUL!!! I also only used frozen corn instead of the frozen mixed veggies & added a little sour cream to the mashed potatos. Just used what I had, but we LOVED it and Payton couldn't get enough!!! Hope you love it too...It will be gone before you know it! ENJOY!

The Hungry Housewife's Guinness Shepherds Pie

1 ½ pounds Organic ground beef 80/201
(1lb) bag frozen mixed vegetables, thawed
2 packets of dry Brown Gravy Mix
1 medium onion
Olive Oil
2 bottles Guinness Beer
2 Tablespoons Tomato Paste
2 cups Sharp Cheddar Cheese
3 pounds baking potatoes
¼- ½ cup milk
1 stick butter
Salt and pepper

Preheat oven to 375

To make Potato filling…Boil the potatoes in slated water until fork tender. Drain completely and place back in pot so all of the water evaporates.In a medium mixing bowl add butter and potatoes. Mash until smooth, while adding the milk for a medium consistency. Add salt and pepper.

Meat filling…Cook and drain ground beef.Place drained beef back in skillet and add 1 bottle of Guinness. Cook until beer has almost cooked out.Add tomato paste to meatIn a medium sauce pan, prepare the brown gravy according to package directions,however, use beer for half the liquid called for( 1 cup water, 1 cup beer)Pour gravy into meat mixture. And cook all together until you get a nice thick gravy.

In medium skillet with olive oil sauté onions until soft and translucent.Add mixed vegetables to the onions and cook until warm throughout.

In a 2 quart baking dish, add meat as bottom layer, the add vegetables, and then add the mashed potatoes. Top with Shredded cheese.Cook at 375 for about 20 minutes or until cheese in nice and bubbly

SIDE TRACKED

What a crazy week...you know when you have those weeks that you have a TON to do but can't seem to find the energy or will power to get moving!? That is totally how my week has been. I do have to say that I am super greatful that my son isn't being as defiant this week as he was last week...that was rough! They are right...consistancy in dicipline is totally key and I think he is finally getting it! Woo hoo!

Well, in stead of folding my laundry and finishing my closet I am getting side tracked and wanted to share some sweet pitures of my son and my niece on Palm Sunday! They had a wonderful time of egg hunting and eating tons of candy! (Thanks Papa & Grammy) Oh yeah, and I am 21 weeks this week and finally feeling "back" to normal! I am so glad!
